I just used regular old chocolate cake mix and added a few chocolate chips to each cupcake before baking. I did mini cupcakes for this particular batch.
Now, the peanut butter icing. The peanut butter icing.
Peanut. Butter. Icing.
- 1 c. creamy peanut butter
- 1 stick of softened butter
- 2 c. powdered sugar
- 2 tsp. vanilla extract
Mix the peanut butter and butter together. Slowly add the powdered sugar. As the mixture gets thicker, slowly add the vanilla and a little bit of milk to keep the mixture creamy. Keep adding the powdered sugar with just a few tsp. of water until you’ve added all the sugar and the mixture is the consistency of thick frosting.
I used a ziplock bag and cut the corner off to pipe the icing on the cupcakes.
